Eton Mess the Healthier Version

Eton Mess

The warm days are going but why not make the most of this summer dessert in these last few weeks of occasional sunshine. I could eat Eton Mess all year round, its one of my favourites and this is a light, healthier version so you don't have to feel guilty having that extra portion. 

Ingredients 
Meringues (makes 12)
2 egg whites 
1/4 tsp cream of tartar 
Pinch of salt 
100g sugar substitube
1/2 tsp vanilla extract 

150g Fat Free Yogurt 
Strawberries diced


Preheat oven to 150'c or gas mark 2 

Spritz a baking sheet with cal controlled oil. 

Whisk egg whites, cream of tartar and salt in a bowl. 

Add sweetner a spoon at a time - whisk until stiff and glossy. 

Gently fold in vanilla. 

Spoon splodges onto the baking sheet.

Cook for 18-20mins. 

Once cooled break up 2 meringues and add in 150g of fat free yogurt and the strawberries and mix.

It didn't last long it was very yummy. Would also be delicious with blueberries too.
